Ingredients
Dough
1 small banana
1 tbsp vegetable oil
1 tbsp milk
1 egg
2 tbsp coconut
4 tbsp self-raising flour
4 tbsp sugar (white or brown)
¼ tsp cinnamon
Pinch of salt
Icing
400 g icing sugar
130 g butter or wooden spoon
2 tbsp milk
1 tsp vanilla essence
Sliced banana (small piece)
Mix 250 ml cake flour & 1 ¼ tsp baking powder to make self-raising flour
Method for banana bread in a mug
Dough
Cut a quarter of the banana off, put to one side for decoration for later. Mash the bigger part with a fork and put in a biggish coffee mug. Whisk the egg in a small bowl until frothy. Add to the banana in the mug. Add the milk and the oil, mix with a fork. Add the dry ingredients, mix with a fork again until smooth.
Microwave on high for approximately 3 minutes. I used a 700 Watt Microwave oven. Test this according to your own microwave, a little less or longer as needed. Put to one side to cool down.
Icing
Mix this together until smooth in a handheld or larger mixer. Put the icing sugar in a piping bag fitted with a star or flower tip and pipe a little bit on top of your cooled banana bread. Decorate with the left-over banana slices and some colourful sprinkles.
