With this coconut cookies recipe the lesson is about coconut. The children look at and hold a coconut, and learn that the inside is white and the outside brown. They feel the rough texture and compare it with the smooth surface of the table they work on. We then shake the coconut (auditory stimulation) and hear that there is milk inside. Ingredients
Coconut Cookies Dough
140 g shredded coconut
190 g sugar
42 g cake flour
2 eggs
1 pinch salt
Cacao powder and/or icing sugar to roll cookies in
If the cookies are a bit smaller, bake at 160°C instead of 180°C
Method for coconut cookies
Pre-heat the oven to between 160°C and 180°C.
Coconut Cookies Dough
Mix together the flour, coconut, salt and sugar. Lightly whisk the eggs and add to dry ingredients.
Mix with a spoon until you have a dough. Divide the dough into balls, about 3 – 4 cm in diameter and roll in the cacao or icing sugar.
Arrange the cookies on a baking tray lined with greaseproof paper. Bake for approximately 10 – 15 minutes , depending on the size of the cookies.
