With our cranberry orange cookies, we do a lesson about cranberries. I show the children photos of cranberry bushes and cranberries. The children taste dried cranberries and look at the colour of the ripe berries. They learn that cranberries are very healthy. We then use the cranberries in our cranberry orange cookie recipe.

Ingredients

Dough
1 cup sugar
Pinch of salt
3/4 cup butter (softened)
1 Egg
2 cups all-purpose flour
3/4 tsp baking soda
1/2 cup sweetened dried
cranberries, chopped
1/2 cup macadamia nuts (chopped)
1 tbs orange zest (grated)

Orange Sugar 
1/3 cup sugar
1 tsp orange zest (grated)

Cranberries are rich in anti oxidants and high in Vitamin C.

Method for Cranberry Orange Cookies

Pre-heat the oven to 180°C.

Orange sugar
Combine all orange sugar ingredients in small bowl and stir until well mixed. Set aside.

Dough
Combine 1 cup sugar, butter and egg in large bowl; beat at medium speed until creamy. Add flour and baking soda & beat at low speed until well mixed. Add all remaining ingredients. Continue beating until mixed.

Shape dough into small balls; roll balls in orange sugar and flatten with your hands. Place onto pans.

Bake  for 7-11 minutes or until edges are lightly browned. (Do not overbake.) Cool in pan for a minute or two and remove to cooling rack. 

Sprinkle orange sugar over cookies.
