We do a lesson about lemons with our lemon tea cookies recipe . We show the children a small lemon tree and take fresh lemons to class. The children see the bright yellow colour of the lemons, feel the smoothness of the skin of the lemon and taste the sourness of the fruit. We use our freshly made lemon curd to fill the lemon tea cookies that we bake in class. The health benefits of lemons are highlighted again.
Ingredients
Dough
150 g cake flour
A pinch of salt
50 g castor sugar
100 g butter (soft)
Lemon Curd Filling
2/3 cup sugar
3 tsp lemon zest (grated)
3 tbs lemon juice
1 tspn Maizena
A pinch of salt
1 egg, beaten
1 egg yolk, beaten
I usually use a double boiler to make lemon curd!
Method for lemon tea cookies
Pre-heat the oven to 170°C.
Dough
Put all the ingredients into a bowl, rub the mixture between your thumbs and fingertips.
Squeeze the mixture together to make a ball of dough.
Pinch off little lumps of dough and form little balls of dough. Make a hole into the top with your little finger. You can also use the back end of a wooden spoon.
Bake for 10-12 minutes at 170°C.
Filling
Heat all the filling ingredients over low heat for ± 25 minutes, stirring constantly until smooth and thickened.
Cool, then fill each hole of the baked (and cooled) cookies with the lemon filling.
Sprinkle icing sugar over the cookies.
